Chicken, Pasta & Pesto Salad with Cheese

 Mixed leaves, rinsed
 Leftover cooked pasta
 Leftover cooked chicken, shredded
 Cherry tomatoes
 Red onion, sliced
 Carbery Cracker White, cubed
 Vinaigrette dressing
 Pesto

Place a few handfuls of mixed leaves into a large bowl (or bowls, depending on how many servings you are making). Scatter over pasta, chicken, tomatoes, onion and Carbery Cracker cheese.

In a small bowl, mix together a bit of pesto with a few drizzles of vinaigrette. Drizzle this over your salad. Enjoy.
