Preheat the oven to 220C/200C fan/gas 7.
Place the sheet of puff pastry onto a lightly floured surface. Cut in half lengthways and spread one half with pesto. Sprinkle grated Carbery Cracker Mature Red over the pesto and then place remaining sheet of puff pastry on top.
Slice the puff pastry into 10 strips and then twist each strip. Place the twists on a lined baking tray and brush with egg. Sprinkle with remaining cheese.
Place in the oven to bake for 12-15 minutes or until golden.
