 225 g Cooked broccoli, roughly chopped
 75 g Carbery Cracker Red, grated
 55 g Panko breadcrumbs
 2 Eggs
 2 Spring onions, sliced
 2 Cloves of garlic, minced
 1 tsp Salt
 0.50 tsp Pepper
 Oil, for cooking

Pre-heat oven to 200°C / 180°C fan and line a baking sheet with parchment paper.

In a large bowl, combine all the ingredients and stir until ingredients are evenly distributed.

Take about 2 tbsp of the mixture and squeeze together in your hand, then shape into a round ball. Arrange balled up mixture on the prepared baking tray.

Brush each lightly with oil, then bake until golden and crispy, about 25 minutes.

Leave to cool slightly before enjoying. Delicious served with a dip of your choice.
